My seven year son is very found of cakes,specially chocolate cake with chocolate fudge. when we were in India he used to visit Domino's at least once a week for their chocolava cake.Now in America I thought of trying my hands for this cake .with a little research and previous experience in America I tried something and believe me result was fantastic.not even him but my friends kids also loved it and asked me to repeat again,so here is my version of chocolate cake with fudge which i wanted to share with everyone........
INGREDIENTS
FOR CAKE
All Purpose flour 1 and 1/2 cup
Coca powder 1 cup
Chocolate powder 1 cup
Brown Sugar 1 and 1/2 cup
Baking Powder just a pinch
Coffee Powder 1 table spoon
Pepsi / Coke 1 can
Eno 1 tablespoon
Buttermilk 1 cup
FOR CHOCOLATE FUDGE
Dark Chocolate Morsels 1 cup
Condensed milk(sweetened) 1/2 cup
Unsalted Butter 1 cube
Chocolate 1 bar
Coffee Powder 1 tea spoon
PREPARATION
FOR CHOCOLATE FUDGE
.First of all melt the chocolate morsels in the in the double boiler.
.Add butter if chocolate is melted properly
.Mix them together very well
.Add condensed milk and coffee powder to this mixture
.Whisk this mixture and make it smooth paste.
.Keep it aside for a while
FOR A CAKE
.Preheat the oven at 350 degree Centigrade
.First of all strain the flour with the help of stainer( channi) so there should be no lumps
.Mix all the dry ingredients other than sugar and eno,then mix them with flour
.Add sugar to this mixture
.Add buttermilk to this, mix it to make a fine paste by folding with spoon
.As we are not using egg so for the fermentation we can add Pepsi and eno, these two will help the cake to be soft.
.Add eno first and then Pepsi/cola to mixture,
.Eno should be added to mixture just before baking the cake,this help in fermenting the cake
.Add Pepsi/cola only to make the batter smooth enough.
.Now oil the pan with butter and sprinkle some flour all around
.Pour the half of the batter in the pan,then add the fudge mixture.
.Keep in notice that fudge should not touch the pan,it should be settle in the middle.
.Now pour the remaining chocolate batter over it.
.For the more chocolaty flavour just add chocolate bar in the mixture and wrap it with chocolate batter.
.Bake it for 15 to 20 minutes.
.Once he cake cooled enough serve with your desired frosting ,I like chocolate you can use any, only sky is the limit.
Tip: This is a egg-less cake so to make this more softer just add two or three tablespoon black coffee syrup on it .this will enhance the taste and softness of the cake.
